This Fresh Easy Guacamole recipe my daughter makes is seriously the only guacamole I will eat.  I honestly can’t tell you what makes it different but I’ve been known to send her to town for the ingredients just so she can make me some at my whim!

This girl of mine, man can she cook and bake!!  She loves to try new recipes and ‘create’ her own but boy can she destroy a kitchen, God love her!

Last year she even decided she wanted to tackle an entire Thanksgiving meal by herself!  She succeeded with flying colors!  It was one of those situations where as a parent you are amazed and then again not really because deep down inside you knew they would totally accomplish it!

Please ignore the copious amounts of alcohol and dirty laundry in the background of these pictures – I should plan better I guess……..or drink less and do more laundry!!

But beer with this guacamole is awesome, so less drinking may not be in the plan!!

Fresh Easy Guacamole

Ingredients
  

  • 4 ripe Avocados
  • 1/2 cup finely minced red onion
  • 3 serrano chilis seeded and finely chopped (jalapeño will work also)
  • 4 Tablespoons finely chopped cilantro
  • 2 Tablespoons lime juice
  • salt and pepper to taste

Instructions
 

  • Remove the seed and skin from the avocados and mash with a fork.
  • Combine remaining ingredients with the avocado.
  • Serve immediately (or eat it all yourself!!) or store in refrigerator tightly covered until ready to serve.
