Creamy Crock Pot Mac and Cheese

As spring rolls around my Crock Pot gets a workout and this Creamy Crock Pot Mac and Cheese is a go-to during planting here on the farm.

So for Christmas my kids bought me one of those triple crockpots!  Yes, 10 years ago a kitchen appliance for Christmas might of brought me to tears but now anything that makes life easier is greatly appreciated and this Chefman Triple Slow Cooker Buffet was a winner!

Now they are advertised for dips and such to take to parties but when I saw it I knew I wanted to have it work more for everyday meals!  So I racked my brain for meats, side dishes and desserts that I could make all in the crockpot!

First up was an easy no brainer – hot dogs, macaroni and cheese with my friend Cris amazing Chocolate Cobbler for dessert!  All 3, right in their own little crockpot, ready to eat when we were!

This meal worked perfectly! I honestly had no idea how good crock pot hotdogs were and so freaking simple!  Just stand them up in the crock pot and turn it on, I’m not even kidding! We aren’t planting corn yet but it won’t be long and this will be the perfect meal for those late suppers!

We hope to start planting corn around April 15, fingers crossed.  This should be past the last frost, the soil should be warm enough and allow for a growing window that will get the corn mature before the first frost.

Spring Planting Corn

Did you know that 35% of the corn grown in Indiana gets exported to be used as livestock feed?  It is normally referred to as field corn, which is what we grow.  If you’re not sure of the difference between what we call ‘field corn’ and ‘sweet corn’ Mary Beth explains it here!  So while on our farm we keep a portion of our corn grown to feed our hogs, the majority of it we sell!  And that will be used to feed hogs, beef cattle and dairy cattle on other farms that buy it!  And it’s the dairy cattle that I particularly appreciated helping feed for this recipe because they produce the milk that is used to make this Creamy Crock Pot Mac & Cheese!

This is an ideal meal for those busy evenings running around kids, helping out on the farm, watching ball games or just enjoying the evening on your patio while supper cooks itself!

Creamy Crock Pot Mac and Cheese

Ingredients
  

  • 1 1/2 cups uncooked macaroni
  • 1 cup shredded cheeses any combination you prefer-I like Harvard, cheddar & munster
  • 1/4 cup fresh shredded parmesan
  • 1 cup cubed Velveeta
  • 2 1/12 -3 cups milk
  • 3/4 cups heavy cream
  • 1/3 cup butter cubed

Instructions
 

  • Combine all ingredients in your slow cooker and stir.
  • Cook on high for approximately 2 1/2 hours, if a little soupy allow to sit for a few minutes, as it cools it will get thicker.
