Gingerbread Candied Pecans

Pecan halves roasted in sugar, spices and an egg white make a tasty holiday treat.

Ingredients
  

  • 1 egg white
  • 2 cups pecan halves
  • 2 Tablespoons light brown sugar
  • 2 Tablespoons sugar
  • 2 teaspoons gingerbread spice
  • 1/2 teaspoon salt

Instructions
 

  • In a small bowl combine the brown and white sugar, gingerbread spice and salt. Stir until well combined.
  • In a large enough bowl to hold all the pecan halves - first add the egg white, then whisk until foamy and frothy.
  • Add the pecans to the frothy egg white and stir to coat all the nuts.
  • Add the sugar mixture to the bowl with the coated pecans and stir to coat all the pecans really good.
  • Pour the coated pecans on a parchment lined large cookie sheet and spread out in a single layer.
  • Bake in a pre-heated 250° oven for 46-60 minutes. Stir nuts every 15 minutes and closely watch them for how brown they are getting and how dry. Mine took 45 minutes, but every oven is different.
