Chantilly Berry Trifle

Ingredients
  

White Cake

  • 1 box white cake mix
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon almond extract

Fresh Berry Layer

  • 8 cups fresh berries
  • 1/2 cup orange juice
  • 1/2 cup Triple Sec or Grand Marnier

Icing Cream Layer

  • 8 ounce cream cheese
  • 8 ounce mascarpone cheese
  • 2 cups heavy cream
  • 3 cups powdered sugar

Instructions
 

White Cake

  • Combine all cake ingredients and mix well with electric mixer
  • Pour batter into a greased and floured 9x13 (or use some Bakers Joy-my favorite)
  • Bake in pre-heated 350° oven for 30-35 minutes, until toothpick inserted in middle comes out clean
  • Allow cake to cool completely
  • Once cake is cool cut into large bite size cubes

Fresh Berry Layer

  • The fruit combinations are limitless - I used strawberries (hulled and cut up), raspberries, blueberries and black berries.
    Be sure to cut larger fruit like strawberries up into pieces close to the size of your other smaller fruit
  • Place all fruit in a bowl, pour Orange juice and Triple Sec over fruit and carefully stir to coat all the fruit
  • Allow to sit at least 15 minutes so those berries are good and tipsy
  • If you prefer not to use the alcohol just replace it with additional orange juice

Icing

  • In a large mixing bowl beat until creamy the cream cheese and mascarpone cheese
  • With mixer on lowest speed carefully add the heavy cream, mix until combined and smooth
  • Now slowly add the powdered sugar and mix until creamy and smooth

Assembly of Trifle

  • First you will want to drain you berries
  • In a large bowl or trifle bowl start by layering cubes of cake-no need to stress just carefully fill the bottom of the bowl with cake pieces
  • Next pour on a happy layer of icing, about half of your icing depending on how big your bowl is and how many layers you want - 3 layers of each use ⅓ of your icing on each layer - same goes for cake and berries!
  • Next layer is berries, carefully place berries on icing layer! Your berries are tipsy and very juicy so handle with care so you don't make a mush of them
  • Start over......cake, icing, berries - until you are out of ingredients or your trifle bowl is full
  • Stand back and admire your creation while drinking the spiked berry juice you poured off your berries!
