Instant Pot Chicken, Rice and Peas

An Instant Pot version of the classic chicken and rice casserole.

Ingredients
  

  • 1 small onion, diced
  • cups rice regular rice not minute rice
  • 4 cups chicken stock
  • 5-6 chicken tenderloins or 3 chicken breasts, cut in half length wise
  • 1 can cream of chicken
  • 1 cup shredded parmesan cheese
  • 2 cups frozen peas

Instructions
 

  • Add chicken stock, diced onion, rice and cream of chicken to Instant Pot-give a quick stir
  • Place chicken pieces in liquid
  • Place lid on Instant Pot, making sure valve is turned to close
    Turn on to Pressure Cook and set timer for 12 minutes
  • Once cooking time is up allow to natural release for 8 minutes then carefully release the pressure with the valve
  • Once safe take the lid off and "fluff" the rice with a fork and shred the chicken to your liking
  • Add the parmasean cheese and peas, stir to combine
  • Place lid back on for 5 more minutes for the peas to warm and cheese to melt then serve with additional shredded parmasean if desired
