In a small bowl combine the sugar, cinnamon and salt and stir until well combined
In a bowl large enough to hold all the pecans - first add the egg white and the water - whisk the egg and water until foamy and frothy
Add the pecans to the frothy egg white mixture and stir to coat all the nuts
Add the sugar mixture to the bowl with the coated pecans and stir to coat all the pecans really good
Pour the coated pecans on a parchment lined large cookie sheet and spread out
Bake in a pre-heated 250° oven - for 45-60 minutes - stirring nuts every 15 minutes and closely watching them for how brown they are getting and how dry. Mine took 45 minutes in my oven but every oven is different!
Notes
Optional: you can add anywhere from a pinch to a 1/2 teaspoon of cayenne pepper to the cinnamon, sugar and salt mixture before you put it on the nuts. Be careful and start light - cayenne pepper can get hot and heavy pretty fast.
