Combine all ingredients in a mixing bowl and mix on medium speed for 2 minutes.
Round Cake Pans - Grease and flour or use the baking spray to coat 2 8 inch round cake pans - divide batter between the two pans
9x12 Baking Dish - Grease and flour or use the baking spray to coat pan and add batter to pan
Bake in a 350° pre-heated oven until toothpick inserted in center comes out clean.30-35 minutes for both types of pans - but keep an eye on it - when the cake starts to pull away from the sides and the toothpick inserted comes out clean your cakes are done.
If using rounds and would like to decorate -allow to cool for 5- 10 minutes then carefully remove the cakes from the pans and allow to cool completely on cooling racks before stacking and decorating.
I used a basic buttercream icing recipe to decorate the cake in the pictures but don't be fooled I use canned icing all the time - tastes just as good and looks just as beautiful!
