Easiest Pumpkin Cupcakes

A super simple cupcake box mix with some pumpkin added makes this semi-homemade and delicious!

Ingredients
  

  • 1 box spice cake mix
  • 1 15 ounce can of pumpkin
  • 3 eggs
  • 1/3 cup oil
  • 1/3 cup water
  • cream cheese icing store bought or homemade - dealers choice

Instructions
 

  • Stir together cake mix, pumpkin, eggs, oil and water in a large bowl until well blended. Beat with an electric mixture on medium speed for 2 minutes.
  • Pour batter into greased muffin cups, filling each 3/4 full. I use muffin liners for easy clean-up!
  • Bake at 350 degrees for 18 to 22 minutes or until centers test done.
  • Allow to cool completely, then ice with the cream cheese icing.
