Strawberries and Pie Crust Cookies with Ice Cream

Ingredients
  

  • 1 quart fresh strawberries
  • ¼-½ cup sugar
  • favorite pie dough recipe
  • sugar for sprinkling

Instructions
 

Strawberries

  • Wash, hull and slice strawberries and place in a bowl.
  • Add sugar, starting with a ¼ cup to strawberries and stir. Tasting is a must - if they taste like they need more sugar, add more!
  • Set aside and let those strawberries macerate, get all soft and sweet. And the juices it will create!

Pie Crust Cookies

  • Using your favorite pie dough recipe or your favorite boughten pie crust {unbaked} - roll out and cut circles, or squares or stars or simply cut into rough shapes.
  • Placed on a lined cookie sheet and sprinkle with granulated white sugar.
  • Bake in a 375° pre-heated oven for 7-9 minutes, until they are lightly browned, crispy and baked.

Assembly

  • We like to eat the sweetened strawberries over vanilla ice cream with the pie crust cookies crumbled over the top.
