In a bowl combine the dry ingredients: flour, baking powder, salt, cinnamon, nutmeg
In a separate bowl for your stand mixer or can be used with hand mixer cream the butter, sugar and molasses until light and fluffy
Add the eggs one at a time to the creamed butter and sugar until well incorporated - scraping sides and bottom of bowl to mix thoroughly.
Add vanilla and combine
On low speed add the flour mixture a little at a time until all is incorporated
On low speed add the cider and finely diced apple - I do this step with my mixer - you can also hand stir if you want to be sure to preserve the apple pieces as much as possible.
Lightly spray your donut pan with non-stick spray and spoon the mixture into the pan filling each one about 2/3 of the way - you can also use a pastry bag, just be sure the tip is cut large enough for the apple chunks to pass-through
Bake in a pre-heated 350° oven for 12-15 minutes, light golden brown and toothpick inserted comes out clean
Cinnamon Sugar
Combine sugar and cinnamon in a bowl and stir to completely combine
Once doughnuts are done and cool enough to handle but still warm - place each doughnut in the cinnamon sugar and coat both sides
