Crock Pot Pumpkin Apple Spoon Cake

Whip up a fall delight in your crockpot that pleases both Team Pumpkin lovers and Team Apple lovers.


  • 1/2 cup butter, softened
  • cups brown sugar
  • 1 cup canned pumpkin
  • 3 eggs
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1-2 21 ounce cans apple pie filling


  • In a large bowl, beat together butter and brown sugar with an electric mixer until well blended
  • Beat in pumpkin and eggs until well mixed
  • In a seperate bowl, combine flour, boaking powder, baking soda, cinnamon and salt
  • Slowly add flour mixture to butter mixture; beat for 2 minutes
  • Spoon pie filling into a lightly greased slow cooker - depending on how much you like apples you can use 2 cans or just 1 - I only used 1 in the above pictures - it keeps the cake moist on the bottom but 2 cans would add more apple flavor as the pumpkin dominates this cake.
  • Spoon cake batter carefully over apple pie filling then spread carefully to cover and to the edges of the crock pot.
  • Cover and cook on high for 1½-2 hours, keeping in mind how your crock pot cooks.
  • Sprinkle with powdered sugar, serve with whipped cream or serve with ice cream - dealers choice!
