I found this recipe in one of my favorite Gooseberry Patch cookbooks, 101 Super Easy Slow Cooker Recipes. I’m Team Pumpkin all the way but Chris is Team Apple so I was instantly intrigued with both the apple and pumpkin in the title.

I sprinkled powdered sugar on this cake for photographs, but man it tastes good warm with a giant scoop of ice cream!

Now I’ll be honest, I seriously have no idea what the official definition of a “spoon cake” is. I even Googled it and got nothing, but since this doesn’t really cut up like a normal cake into squares I took the liberty of calling it a spoon cake! My blog, my rules!

 

This makes a pretty thick cake in a regular crock pot, so it you want to serve more people this will also work in the casserole crockpot. The cake will be thinner and your apple to pumpkin cake ratio will be greater!

Crock Pot Pumpkin Apple Spoon Cake

Whip up a fall delight in your crockpot that pleases both Team Pumpkin lovers and Team Apple lovers.

Ingredients
  

  • 1/2 cup butter, softened
  • cups brown sugar
  • 1 cup canned pumpkin
  • 3 eggs
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1-2 21 ounce cans apple pie filling

Instructions
 

  • In a large bowl, beat together butter and brown sugar with an electric mixer until well blended
  • Beat in pumpkin and eggs until well mixed
  • In a seperate bowl, combine flour, boaking powder, baking soda, cinnamon and salt
  • Slowly add flour mixture to butter mixture; beat for 2 minutes
  • Spoon pie filling into a lightly greased slow cooker - depending on how much you like apples you can use 2 cans or just 1 - I only used 1 in the above pictures - it keeps the cake moist on the bottom but 2 cans would add more apple flavor as the pumpkin dominates this cake.
  • Spoon cake batter carefully over apple pie filling then spread carefully to cover and to the edges of the crock pot.
  • Cover and cook on high for 1½-2 hours, keeping in mind how your crock pot cooks.
  • Sprinkle with powdered sugar, serve with whipped cream or serve with ice cream - dealers choice!
