Golden Mushroom Chicken

Just one whiff of this Dutch Oven Golden Mushroom Chicken dish and I am instantly reminded of almost any moment in my childhood.  It’s a super simple, one pot meal that everyone will love!

I hadn’t made this meal in probably 20 years but I was reminded of it right at 5 years ago when I rode with my Dad in the semi hauling corn from a field back to the grain bins for storage.

All their grain has to go past the house I grew up in (where my brother, sister-in-law & 4 kids live now) – it always has. When I was a kid I can remember the semi’s going past all day but I distinctly remember that every night during harvest my Dad would blow the air horn one long blast to let Mom know that that was his last load and that after he dumped he would be in for supper! We didn’t have a 2-way radio in the house and this special signal was just something that he did to let her know he was almost done for the day. I can remember seeing the truck coming and then hearing the air horn and running in the house to tell her – I wonder if I really thought she couldn’t hear it?

I enjoyed the load I hauled with him that day, I had not been back to their grain bins in a long time! They had changed some stuff around and added some new stuff. I asked lots of questions and he answered them!  There are probably a million things I should of been doing this day but it is a few hours that day I will never regret.

Dad

This just happened to be my Dad’s last fall, he passed away in March the next year.  I took this picture as I was leaving the field that day, it was just my Dad waiting on the next load, I loved what it said then about the kind of person he was and it’s still my favorite to this day.

That ride reminded me of so many days during my childhood and the suppers my Mom always had waiting for him every night when he came in and this was one of them that our whole family loved!

I always giggle about how popular Dutch Ovens are nowadays – my Mom was using a dutch oven before dutch ovens were cool and she always made this one in hers!

Golden Mushroom Chicken

Ingredients
  

  • 2 chicken breasts-bone in
  • 3 chicken legs-bone in
  • 5 potatoes peeled and quartered
  • 8 carrots peeled and cut into 3-4 inch pieces
  • 2 onions peeled and halved
  • 2 cans Campbell's Golden Mushroom Soup
  • 1/2 can of water
  • Salt and Pepper to taste

Instructions
 

  • Salt and pepper the chicken on both sides.
  • Brown chicken on both sides in a little bit of oil in your dutch oven or large skillet with a lid.
  • Add the carrots, potatoes and onions to the pan, pour in both cans of soup and the water.
  • Cover with lid and place in a pre-heated 350 degree oven for 1.5 hours.
