Red, White, and Blue Jello Stars That Actually Stay in Layers

Whether you’re celebrating July 4th, Memorial Day, or just showing off at the church potluck, these layered beauties bring color and cheer to the dessert table without any drama-unless you count trying to keep your layers straight. (Don’t worry, we’ll get to that.)

Kids love helping with this! It’s a great make-ahead project and then have the kids cut out the shapes with cookie cutters. Honestly, the tips of pointy stars are kind of tough so this a perfect place to use a more rounded star. Or honestly, the patriotic part is the red, white, and blue layers so you could simply cut these into squares or use any shape of cookie-cutter!

Gather Your Ingredients

You won’t need anything fancy, but you do need to pay attention to the gelatin. This isn’t your run-of-the-mill box of Jello-and-pray situation. You’re building edible architecture here, and that means structure.

  • 1 (6 Oz) box of red Jell-O – Cherry or Strawberry, pick your favorite.
  • 1 (6 Oz) box Blue Jell-O – Berry Blue is classic.
  • 6 envelopes/packets unflavored gelatin- YEP, six. Don’t skimp. This is what gives the Jello its finger-food strength.
  • 1 (14 Oz) can sweetened condensed milk- for the white layer. Thick, creamy, and just the right amount of sweet.
  • Water- You’ll be boiling and measuring this, so don’t eyeball it.
  • Ice cubes- These help cool the colored layers quickly and bring them to volume.

Optional but encouraged: a star-shaped cookie cutter, a sense of humor and fridge space cleared out ahead of time.

Let’s Make Finger Jello Stars

This is a three-layer process, so yes, it takes a little time-but it’s mostly waiting. You can do laundry or, more realistically, scroll TikTok between layers. Here’s how it goes:

🔴 Red Layer

  1. Bring 1½ cups of water to a boil.
  2. Stir in the red Jello powder and 2 packets of unflavored gelatin. Mix until everything is completely dissolved—no grainy bits.
  3. Add ice cubes and cold water to bring the total volume up to 3 cups. Stir until the ice melts.
  4. Pour into a deep-sided cookie sheet or 9×13-inch pan. Carefully place the pan in the fridge (level is key!) and let it set for 30–45 minutes.

⚪ White Layer

  1. Boil another 1½ cups of water and stir in 2 packets of unflavored gelatin. Make sure it’s completely dissolved.
  2. Slowly stir in the full can of sweetened condensed milk. Let this sit until it reaches room temperature. Seriously—don’t pour it hot.
  3. Once the red layer is firm and the milk layer is cool, gently pour it over the red. Refrigerate again for 30–45 minutes, until it’s set.

If you pour too soon, the red will rise to the top like a rebellious teenager and ruin your perfect stripes. I speak from experience.

🔵 Blue Layer

  1. Boil your last 1½ cups of water and stir in the blue Jello powder and 2 packets of unflavored gelatin. Dissolve fully.
  2. Add ice and cold water to hit 3 cups of liquid. Stir and let cool.
  3. Gently pour the blue layer over the white once it’s fully set and firm to the touch.
  4. Chill for at least 2 hours, or go ahead and forget about it until tomorrow—these layers hold up beautifully.

✂️ Cutting & Serving

  • Once fully set, use a small star cookie cutter to cut festive shapes.
  • Alternatively, use a sharp knife to cut into bite-sized squares for easier serving.

Tips, Tricks, and Questions Answered

Do I have to use unflavored gelatin?

If you want clean layers that don’t sag or slip, yes. The added gelatin gives each layer strength, so you can cut shapes or stack pieces without them falling apart. It’s the difference between “cute snack” and “Jello soup”.

Can I speed up the chilling process?

You can pop the tray in the freezer for 10-15 minutes between layers, but don’t let it freeze. Freezing changes the texture, and not in a good way. Think icy and weirdly spongy.

What’s the best way to cut shapes?

Use a small cookie cutter – stars are classic, but hearts or circles are fun too. Run the cutter under hot water and wipe it dry between cuts for clean edges. Don’t want to mess with shapes? Just cut the whole pan into squares. No one’s turning these down.

How do I clean the sticky mess?

The layers will leave a little sugar residue, but warm water and soap do the trick. If you’re really in a rush, pretend the pan is “soaking” and walk away until someone else needs it.

Can I make these ahead of time?

Absolutely. These stars are make-ahead heroes. Assemble them the day before your party and keep them covered in the fridge until you’re ready to cut and serve.

How do I store leftovers?

Store any leftovers in an airtight container in the fridge. They’ll keep for 3-4 days, but let’s be honest, they won’t last that long.

I’ve made the Red, White, and Blue Jello Stars more times than I remember, and I still love them. They’re nostalgic, fun, and just the right amount of showy. Make a batch for the fireworks, the BBQ, or just because it’s Tuesday and you need something to smile about!

Equipment

  • 1 15×10 inch jelly roll pan This size gives you even layers that chill and set quickly
  • mixing bowls
  • whisk, spoons
  • measuring cup
  • star cookie cutter, sharp knife

Ingredients

  • 1 6 ounce box red jello strawberry or cherry
  • 1 6 ounce box blue jello berry blue
  • 6 envelopes/packets unflavored gelatin divided
  • 1 14 ounce can of sweetened condensed milk
  • water
  • ice cubes

Instructions

Red Layer

  • Boil 1½ cups of water and pour into a mixing bowl.
  • Add the red Jello powder and 2 envelopes/packets of unflavored gelatin. Stir until everything is fully dissolved.
  • Add ice cubes and cold water until the liquid reaches 3 cups. Stir until the ice mostly melts.
  • Pour the red mixture into your 15×10 jelly roll pan.
  • Place it in the refrigerator on a level surface and chill until completely set, about 30-45 minutes.
  • Note: If you're using a smaller pan, like a 9×13, layers will be thicker and may take up to an hour to fully set.

White Layer

  • Boil another 1½ cups of water.
  • Add 2 envelopes/packets of unflavored gelatin and stir to dissolve.
  • Stir in the sweetened condensed milk and let the mixture cool to room temperature – this is important so it doesn't melt the red layer.
  • Gently pour the white layer over the fully set red layer.
  • Chill again until set, about 30-45 minutes in a jelly roll pan, or longer is using a smaller one.

Blue Layer

  • Boil 1½ cups of water and add the blue Jello powder and 2 enevelopes/packets of unflavored gelatin. Stir well.
  • Add ice and water to bring the liquid to 3 cups total.
  • Let it cool to room temperature before pouring it over the set white layer.
  • Refrigerate until the entire dessert is fully set, at least 2 hours, or overnight for best results.

Cutting and Serving

  • Use any size star-shaped cookie cutter to cut fun patriotic shapes, or simply cut into 2×2 inch squares.
  • Serve chilled and store leftovers in an airtight container in the fridge for up to 3-4 days.

Notes

  • I use a 15×10 jelly roll pan for this recipe – it creates the perfect balance of thickness and chill time.
  • Using a smaller pan like 9×13? Your layers will be thicker and yield fewer servings. It may take longer to set, so give each layer extra time in the fridge before adding the next.
  • Use a level shelf in your fridge for clean layers and avoid slanty stars.
  • Let each layer cool to room temp before pouring to prevent bleeding or mixing.
