What is it about the temperature cooling down just a tad, the rustle of leaves on the trees and the start of a school year that suddenly makes people crave pumpkin?

Like without even looking at a calendar I know when fall is near because my body just says “I NEED PUMPKIN”!

And honestly can we focus on that cream cheese icing! It’s out of a can you guys – no shame in my game! No one will ever know when you using a basic icing tip to decorate the cupcakes with a swirl.

AND YES YOU CAN DO IT!

Easy Pumpkin Spice Cupcakes

These are simple – I love a really good simple recipe! I found this in a Gooseberry Patch cookbook and couldn’t resist.  They have so many fun fall ones. These are made with a cake mix base and pairs well with cream cheese icing. Those are both no-brainers for me.

Easiest Pumpkin Cupcakes

A super simple cupcake box mix with some pumpkin added makes this semi-homemade and delicious!

Ingredients

• 1 box spice cake mix
• 1 15 ounce can of pumpkin
• 3 eggs
• 1/3 cup oil
• 1/3 cup water
• cream cheese icing store bought or homemade - dealers choice

Instructions

• Stir together cake mix, pumpkin, eggs, oil and water in a large bowl until well blended. Beat with an electric mixture on medium speed for 2 minutes.
• Pour batter into greased muffin cups, filling each 3/4 full. I use muffin liners for easy clean-up!
• Bake at 350 degrees for 18 to 22 minutes or until centers test done.
• Allow to cool completely, then ice with the cream cheese icing.

Let’s face it I’m always about 2 steps behind and while I can plan all I want in my head to take that homemade dish of mac and cheese, potato salad or 2 layer lemon cake  it just isn’t going to get made in the hour before we walk out the door to a party, get together with friends or neighborhood pitch-in!

May I introduce you to one of my favorite stand by’s –

it’s either cupcakes and sprinkles or stopping by the grocery store deli, which I’m not above either!!!

I’m not even kidding when I say people will think you are so sweet and super talented and will thank you for all the time you spent!  But let’s be honest, at least right here with each other, it took less time to make these cupcakes than to take the pics and write this post, and even more honest…….my kid did the baking!!!

For her 16th birthday, which always falls during out county fair, my daughter wanted to hand out cupcakes from our cattle stalls to everyone else to celebrate her day!  Besides the fact that I was awed by her generosity we had tons of fun coming up with the perfect flavors to hand out, finding sprinkles & cupcake liners to match and toping with the perfect complimentary icing flavor!  And in the interest of keeping it on the up and up – we not only used homemade icing but boughten as well!!

She chose white cupcakes with these colorful cupcake liners, buttercream icing and super cute flower sprinkles!  Cherry Chip in polka dot liners, pink buttercream icing and turquoise sugar balls! And traditional chocolate in brown craft paper liners……..

And heck yeah those are cow sprinkles…….

Whether I make homemade icing or use the boughten stuff I always put it in a pastry bag with one of my favorite icing tips and quickly ice each cupcake – it’s super easy, honestly almost quicker than using a knife to ice them and it totally makes them look professional!

Throw on your sprinkles and WAHLA a masterpiece!

First up are these cute Lemon Drop Pudding Cupcakes made using my Lemon Drop Pudding Cake recipe, just in cupcake form!

They really are simply a white cupcake with a squeeze of lemon pudding in them, so easy!  I put some Cool Whip on top, sprinkled them with some green coconut and added jelly beans.  A Peep is always cute and I left some plain- something for everyone!

The lemon pudding surprise in the middle brightens these up and just like the cake is a taste of Spring!  I simply mixed and baked the cupcakes according to the box mix directions and made a batch of lemon pudding.  Once both were cool I put a large tip in a pastry bag and filled the bag with the lemon pudding. You could also use a ziplock bag for this.  Then I just poked it into the center top of the cupcake and squeezed about a tablespoon of lemon pudding into the cupcake.  Top with Cool Whip, sprinkle with some green coconut, add jelly beans and amaze your family and friends!

Easy Easter Cupcake Ideas

Second, are simply these yellow cupcakes with chocolate icing.  It really doesn’t get much more simple – these are literally a yellow box mix of cake, a can of chocolate icing, marshmallow bunnies, Wilton Edible Icing Daisies and some edible green grass for decoration.

A cute Easter dessert doesn’t get any easier than this!  Once the cupcakes were cool I filled a pastry bag (or again a ziplock bag works) with boughten chocolate icing. I gave each cupcake a swirl of icing, took a whole 8 minutes!  Then I either stuck a marshmallow bunny or a dish on each one!

For display, I simply stacked a large and small cake plate. I put some edible grass (which for decoration it didn’t really need to be edible) and just put on the cupcakes!  The smaller individual cupcake stands I got here, I cut a little of the edible grass to place around them and threw out some jelly beans!  So simple, quick and festive!

These soda cupcakes are all over Pinterest, so this ‘recipe’ is nothing new but holy cow am I ever glad I jumped on this bandwagon!  We literally walked in the door from getting groceries and within 30 minutes were sinking our teeth into these cupcakes with a melted crusty marshmallow topping to boot!

I love Orange Soda, it has become my reward for getting groceries – yes I believe I deserve a reward for getting groceries!

Do you know how many times you touch your groceries:

• pick them off the shelf and put them into your cart
• pull them out of the cart and onto the checkout line
• put the bags in your cart
• move the bags out of your cart and put them in your car
• out of the car and into your house
• take them out of the bags and put them in the cabinets

That doesn’t even count when you go to cook the meals!  So yes I believe we all deserve a reward for getting groceries and mine is a orange soda on the way home from Wal-Mart!

But combine that orange soda with a white cake mix and we are at a whole new level of reward, especially when you figure how fast you can make them…….well and eat them!!

Orange Soda Cupcakes

I am a firm believer a cupcake needs a top and to keep these super simple I decided toasted marshmallow creme would be ideal!  So when the cupcakes themselves were done I pulled them out of the oven, turned on my broiler, plopped a big old spoon full of marshmallow creme on each cupcake and stuck them back in the oven till the marshmallow creme started to melt and get just a touch toasty brown on top – watch them close this won’t take long!

WAHLA Orange Soda Cupcakes

A seriously good dessert in less than 30 minutes, only 3 ingredients and homemade!!

Orange Soda Cupcakes

Ingredients

• 1 Box White Cake Mix
• 1 can of orange soda
• Marshmallow Creme

Instructions

• Combine cake mix and can of soda together, mix well.
• Divide batter among cupcake liners.
• Bake 15 to 18 minutes, until toothpick inserted in the center of cupcake comes out clean, in a 350 degree oven.
• As soon as cupcakes are done, turn oven broiler on, top each cupcake with a heaping tablespoon of marshmallow creme and place under broiler until the marshmallow is slightly toasted.
