Crock Pot Chili Con Queso Dip is made entirely in the crockpot. There is no need to dirty a frying pan for the meat! This is my idea of easy and finger-licking good!
When I figured out that I could cook my sausage in the crockpot this officially became one of my favorite recipes. I didn’t need to fry it up first on the stove and dirty a pan, I could make the whole recipe in the crockpot.

Crock Pot Chili Con Queso Dip
We use this for gatherings with friends and family as an appetizer or snack. It also makes a great and easy meal. We make big plates of nachos with this Chili Con Queso, topped with some salsa, sour cream, and shredded lettuce.
Super easy on those nights, which seem to be so often, that everybody needs to eat at different times. I strive for family supper every night possible around the table. But it isn’t always possible so just getting everyone a full stomach is my priority and this does the trick every time.
Crock Pot Chili Con Queso Dip
Ingredients
- 1 pound of sausage
- 2 pound box of Velveeta cheese cut into cubes
- 1 can of Ro-Tel
Instructions
- Put the sausage in the crock pot and turn on high.
- Leave cooking and stir a few times until the sausage is fully cooked and crumbled.
- Depending on your crock pot - times vary - but mine takes about 2 hours.
- Once sausage is browned and crumbled add the entire can of Ro-Tel and all the cubed Velveeta.
- Stir occasionally to combine as the cheese melts.
- Enjoy with your favorite tortilla chips.
