I’m kind of a picky potato soup person!  I grew up with a really creamy homemade potato soup that was made with love by my Mom and warmed you from the inside out!  It is a family favorite but while delicious not a quick soup and it could be kept warm in the crock pot it wasn’t a dump and go recipe like this one!

This version came from a friend of mine who is an agronomist in Illinois!  When I was searching for a recipe she said and I quote:

“I have a recipe I took to an agronomy meeting and the farmers practically licked the crock pot clean!”

There was no bigger endorsement needed than that, farmers tend to lean towards a good meat and potatoes meal, so a soup endorsement is golden! And once we tried it we knew why they had licked the crock pot clean!

I will say that I’m pretty sure the bacon in it helped a ton, bacon never hurt anything though!  I’m not gonna lie I love me some bacon and sausage after working with hogs some days!  Thankfully our freezers are full of it – we don’t want to run out!

Ingredients
  

  • 32 oz bag of cubed frozen hash browns
  • 1 can cream of chicken soup
  • 32 oz chicken broth
  • 8 oz shredded cheese mild or sharp
  • 1- 8 oz block of cream cheese softened
  • 3/4 cup crumbled cooked bacon
  • Salt & pepper to taste

Instructions
 

  • Place all ingredients in a crock pot and cook on high for 3 hours.
  • Toppings: shredded cheese, green onions, bacon bits, sour cream

  1. My son is going back to college and with cold winters in Maine soup is a good quick meal. I was looking for a crockpot dump recipe for loaded potato soup and this looked great. Made it today to try and it was on the thin side for him so I showed him how to use a potato masher to thicken it up and it worked great. It was a hit with everyone and so easy to make. Thanks for sharing.
